This is a quick and easy appetizer for potlucks or game days. Make plenty, they won't last long.

INGREDIENTS:
1 Cup cooked/shredded chicken meat (May substitute Crab or Imitation Crab)
1/2 C. Black Olives (chopped)
4 oz. Cream Cheese (softened or whipped)
1/2 C. Mayonnaise*
1/4 C. Grated cheddar cheese
1/4 C. Grated carrot
1/4 C. Celery (chopped)
1 tsp. Paprika
2 T. Sweet Relish (optional)
Salt and Pepper to taste
1 Pkg. Puff Pastry Cups (or Puff pastry sheets)
DIRECTIONS:
Mix all ingredients together. Spoon into pre-made Puff pastry cups or use puff pastry sheets, roll out and cut into 3-4 inch squares and place in mini muffin pans. Bake 10 minutes at 400 degrees or until browned. Remove from the oven, allow to cool and spoon the Crab or Chicken mixture into the prepared pastry cups. Refrigerate until ready to serve.
