You can spend the money for fermenting equipment or you can ferment without it. Kraut has been made for centuries without any fancy equipment and the same applies today. It's easy to make, with little effort. The hard part is waiting for the brine to develop and the kraut to be ready to sample.
What you need:
A spiralizer OR grater
1 Medium zucchini
1 Quart Mason Jar
2 tsp. Pickling Salt OR Fine Sea Salt
Popsicle stick or plastic utensil
Directions:
Wash the zucchini. Peel or leave the peels intact.
Spiralize or grate the zucchini. Pack 1/4 of the zucchini into a clean, sterilized mason jar. Add a teaspoon of salt. add another layer packed, top with salt. Continue until the jar is fully packed within an inch to inch and half of the jar rim, and top with salt. Use a popsicle stick or broke handle of a plastic utensil to hold the zucchini below the rim of the jar and fully under the brine. Cap, label and set aside for up to a week, at room temperature. Rotate the jars top to bottom, then release the gases from the jar each day. (Burp the gases out by popping the lid slightly, then recap). Ready to use. Refrigerate.
To use: You can use the zucchini kraut the same way you use a cabbage kraut. Add it to salads, sandwiches or eat it straight from the jar.
Note: You can process the kraut in a pressure cooker for long term storage if desired. Follow the same instructions and guidelines for making Cabbage kraut. Refer to the National Food Preservation guidelines.
Note: Large zucchini can be used if grating, just scrape out the large seeds.
Tip: Spiralizing the zucchini is quick and easy, and of course you can use the spiralizer for potatoes, carrots, sweet potatoes and fruit by using the individual blades provided with the spiralizing unit, to use in salads or for fermenting. You can grate the zucchini if you prefer.
Caution: If mold forms, discard. This should not happen, but any exposure to excess humidity can cause molding.
