Yogurt Cheese is yogurt that has been drained of all the whey (the white liquid you may see in a container of yogurt, cottage cheese or sour cream), to make it firmer and because of it's high heat point can be used in pastas, or other cooked recipes for another level of flavor.
Yogurt Cheese Herb Spread
Ingredients
1 C. Yogurt Cheese (refer to the link to make Yogurt Cheese)
! T. Fresh Chopped Herbs (or to taste)
Seasoning (optional-your favorites)
Directions:
Thoroughly mix the fresh chopped herbs into the yogurt cheese. Add additional seasonings to taste if you prefer. Refrigerate until ready to use.
Serving Suggestions: Use as a spread for crackers or bagels, or use to stuff celery or mini sweet peppers as appetizers.
Note: The herbs I used were Chives, Oregano, Thyme, Parsley and Chive Buds. You can add your choice of fresh or dried herbs, minced garlic, seasonings to your liking.
Tip: Use the yogurt cheese in the same way you would use cream cheese. The texture is similar, though the taste may not be quite as sweet or mild as cream cheese.
