Beans are a healthy source of protein and fiber that are easy to cook and are an essential staple in my pantry.
Ingredients
1/2 C. Each Dry Pinto, Red, White Northern and Black Eyed Peas (or your favorites)
1/2 Onion sliced
1 Garlic Clove minced
1 15 oz. Can Tomato Sauce
2 tsp. Sriracha sauce (or to taste or your favorite hot sauce)
1/4 C. Coconut Palm Sugar (or brown sugar or to taste)
1 T. Malt Vinegar
Hickory Salt and Pepper (to taste)
2 tsp. Smoked Paprika
1/2 pound Ground Meat (Chicken, Beef, Pork)
4 Slices Bacon, Chopped (cooked crisp-reserve some for topping)
1 each Small Red and Yellow Sweet Pepper (sliced)
6 C. Meat Broth (or enough to cover the bean mixture)
Fresh Parsley for garnish.
Directions:
Wash and sort the beans. Cover with water and allow to set overnight OR do the quick cook method, cover the prepared beans with water, cook on medium high heat for half an hour. Drain and rinse. Place the beans in the slow cooker and cover with the broth.
Cook the bacon until crisp. Place on paper towel to absorb any excess grease.
Prepare the vegetables. Saute the onions, garlic and sweet peppers in the bacon grease.
Lightly brown the ground meat. Drain off any grease. Mix the cooked ground meat, tomato sauce, sugar, vinegar, paprika, salt and pepper. Set aside.
Set the slow cooker on high and cook 2 hours.
Mix the cooked ground meat mixture in with the beans. Continue cooking on low for 4 to 6 hours or until the beans are fork tender but not mushy.
Serving Suggestions: Serve over mashed potatoes or rice or serve in a bowl with cornbread or biscuits.
NOTE: Canned beans are available however they do contain high amounts of salt. You can use the canned beans for a quicker version if desired, rinse in fresh water to reduce the salt content. Adjust your cook time if you are not cooking the beans from scratch.
