CRANBERRY SAUCE (Jelled)
4 CUPS CRANBERRIES (FRESH OR FROZEN)
2 CUPS APPLE CIDER OR JUICE OF CHOICE
1 CUP HONEY (or to taste)
1 squeeze of fresh lemon (optional)
If using frozen cranberries, allow to thaw in the refrigerator. Rinse the cranberries and sort for firm ripe berries and reserve shriveled or discolored berries for the chickens. Pour the cranberries and juice into a medium-size kettle. Bring to a boil, then turn down to simmer until berries are cooked (about 20 minutes) . Strain off the juice into a bowl, pushing against the berries to extract all the juices. Add the honey and a squeeze of lemon juice and bring to a soft boil for 10 minutes or until thickened. Pour into hot sterilized jars and fasten caps and lids, or allow to cool and refrigerate. If canning, follow strict guidelines for processing. If you wish to serve this in slices, pour into straight sided jars or serving dish.

NOTE: Other sweeteners of choice may be used. Pure Maple syrup, white sugar, corn syrup, stevia, coconut palm sugar, Agave Nectar are all options if you prefer not to use honey.
