Wash, sort and soak 2 cups Navy Beans (or your favorites overnight, or quick soak/simmer on the stove 2 hours, drain then place in Slow Cooker cover with homemade ham broth.)
Put the ham bone with meat in enough water to cover and simmer until the meat falls off the bone. Skim excess fat, freeze in seal tight containers or use fresh for Ham n' Beans soup.**
Combine the beans, ham broth and some of the ham meat cut in bite sized pieces in a slow cooker. Allow to slow cook 6-8 hours or overnight on your lowest setting. Add left over Sweet potatoes (about 2 cups) and left over mashed potatoes (about 2 cups). Season as needed to your taste. (with left overs they are already seasoned, so it doesn't take much if any additional seasoning). If you want a "smoked ham" flavor, add a teaspoon of Smoked Paprika, or a couple drops of "Liquid Smoke" to your soup. If you do not have left over mashed potatoes, you can use a cup or so potato flakes as a thickener if desired for the consistency that you prefer. Serve with fresh salad and fresh homemade Skillet Honey Cornbread or Sourdough bread.
