Chicken Coop Chatter©
1 Butternut squash (Peeled-seeded and cut in bite size pieces)
4 slices Maple flavored bacon (refer to my recipe)
Garlic seasoning mix (refer to my recipe)
Salt and Pepper to taste
1 T. Butter
Prepare the squash (reserve the seeds for my squash seed snack recipe). Place in a bowl, sprinkle with the seasoning mix and salt pepper to taste. Mix thoroughly. Layer the squash into the baking dish or cast iron skillet, spreading evenly. Top with the Bacon slices. Bake at 350 degrees until the squash is lightly browned and tender and the bacon is cooked through (About 35-40 minutes).
To easily remove the skin, place the squash in the oven until softened, but still firm, allow to cool enough to handle, then remove the skin and cut in bite size pieces. Or heat halved squash to firm but tender, remove from oven and allow to cool enough to handle. With a sharp knife, cut squares in the flesh of the squash, remove from the shell and layer in baking dish or skillet. Reserve the shell for serving (Refer to photo for example)
