2 C. Flour
Pinch salt
1 tsp. baking soda
1/2 tsp. Baking powder
2 eggs
1 cup Cottage Cheese
1 C. Heavy cream
1 T. Coconut oil
1 T. Coconut Palm Sugar
2 Fresh Peaches, pitted, diced and skins removed (reserve the peels for making Peach peel syrup)
Sift the flour, salt, soda and baking powder together. Toss the peaches with coconut sugar. Beat the eggs until frothy, beat in the eggs and cream. Add the flour mixture and stir until well incorporated. Fold the cottage cheese into the flour mixture. Add the sweetened peaches and stir in.
Heat the cast iron griddle with a little coconut oil or butter. Ladle or scoop the batter onto the hot griddle. Turn when bubbles form in the center and the edges begin to curl. Turn and brown the other side.
Serving suggestion: Drizzle with homemade peach syrup and top with whipped cream and a dash of cinnamon if desired.
