Ingredients
Serving Size: 4-6
⦁ 2 C. leftover rotisserie chicken or 4 grilled boneless chicken breasts. Cut in slices or cubes
⦁ 2 cups prepared marinara sauce *See my Fresh Tomato Spaghetti Sauce
⦁ 1/2 C. Cottage Cheese
⦁ 2 tablespoons herb butter or Basil Infused Oil*
⦁ 3 garlic cloves, crushed and finely chopped
1 c. sliced cherry tomatoes (optional)
⦁ 1/4 cup fresh basil (chopped)
⦁ 2 C shredded mozzarella cheese, divided
⦁ 1/2 cup grated Parmesan cheese, divided
⦁ 1 C. Seasoned Bread Crumbs or crushed seasoned croutons
Directions
⦁ Preheat oven to 350 degrees F (175 degrees C).
⦁ Coat the bottom and sides of a cast iron skillet with the butter, add the minced garlic.
⦁ Arrange the chicken slices or cubes in bottom of the cast iron skillet, mix cottage cheese with the sauce and pour sauce over chicken. Sprinkle basil over the sauce, and top with half the mozzarella cheese, then half the Parmesan cheese. Sprinkle the bread crumbs over the top, then sprinkle with the remaining mozzarella cheese and remaining Parmesan cheese.
Bake in preheated oven until cheese and croutons are golden brown and the chicken is heated through, about 30-35 minutes
