1/2 Cup Spinach (thawed, drained and squeezed dry)
1/2 cup Smoked Chicken or Turkey (shredded~~Rotisserie chicken can be substituted)
1/2 cup Cottage Cheese
1 small Diced Tomato
1+ cups Shredded cheese (as desired--more or less)
1 Tube unbaked French Bread dough
Garlic Butter for brushing on bread dough
1 1/2 T. Butter
1 1/2 tsp. Garlic Parmesan seasoning
Directions:
Pre-heat the oven as directed on the dough package. My package said 350 degrees
Carefully open the tube of French bread dough, roll the dough into a log, with a sharp knife score down through the center without cutting into the bottom, spread out with fingers, just enough to layer ingredients in the center. Spread half of the cheese down the center. Then a layer of spinach, a layer of meat, a layer of cottage cheese, then diced tomatoes. Top with the remaining cheese. Roll the dough over the ingredients and seal the seam. Set on foil or parchment paper lined cooking sheet that has been lightly coated with oil, seam side down.
Melt butter, mix in the garlic seasoning, brush on the top of the bread. Cut diagonal slits in the dough. Bake as directed on the package (my package said 25-30 minutes it took right at 25 minutes). Remove from the oven and allow to set 5 minutes, slice in diagonal slices and serve as an appetizer with pizza sauce for dipping or as a side dish.
