1 1/2 C. Flour
3 1/2 tsp. Baking powder
Pinch Salt
1 tsp. Sugar
1 C. fresh or frozen blueberries (or fruit of choice)
1 1/4-2 C. Eggnog* or half & half
2 Eggs
3 T. Butter or Coconut Oil
Preheat cast iron skillet with 1 T. oil or butter over medium heat. Mix ingredients together until the consistency and thickness you prefer (mine is in between thin and thick). Add the fruit and fold in. When the oil is melted and a drop of the hotcake batter sizzles the pan is ready to cook. Pour batter into the pan, spreading out with a spoon, when bubbles form and begin to pop around the edges turn to cook the other side until browned. Serve warm with butter and syrup or your favorite breakfast toppings. This is excellent served with my eggnog caramel sauce.
