Virtually any vegetable, peas, beans, rice, oats etc. can be dried and ground into an alternate flour. You use 1/4 cup to 3/4 cup regular flour when using an alternate flour. If your recipe asks for 2 cups flour, use 1/2 cup alternate flour to 1 1/2 cups regular flour. This is the common formula. But in this discussion I was reminded of Ezekiel flour. This is a combination of many different dried grains, beans and lentils (peas).
Scientists have studied the combination of the dried goods and found to their surprise, that it is a complete formula for life sustaining food, minus Vitamin D, which you can easily get from the sun. Ezekiel of the Bible, lived over a year on this bread alone.
You can grind your own dried vegetables and you can find the barley, wheat buds etc. in bulk foods. I have a mini grinder that I use for a cup of the ground alternate flours, but if you are doing much or putting aside enough for future use, you will need a grain grinder, for ease of use. Regardless, the following grains and beans have a very long shelf life, can be ground at any time and used as described above, or added to stews/soups as thickeners and for added flavor.
One formula for Ezekiel flour is as follows: (adjust the measurements to the amount you want to store or use immediately). Making your own ground, flour substitutes is quick and easy. Takes about one minute to make a full cup of the ground bean flour.
20 parts Wheat 2 parts Hulled Millet 1 part Great Northern Beans
12 parts Spelt 2 parts Lentils 1 part Red Kidney Beans
4 parts Pearled Barley 2 parts Pinto Beans
If you are sensitive to wheat products, you can substitute Spelt, Garbanzo Beans, Lentils and Millet. All of the grains and beans can be sprouted as well, for greens. There are recipes for using your Ezekiel flour. For those wanting to supply the pantry and for homesteaders that are trying to live more off the land than the grocery store, the Ezekiel formula is a life sustaining mixture. NOTE: Though Soy seems to be a touted product for allergies, it is NOT shelf stable and will become rancid in a short time, so it is not a good substitute for the above formula.
