Ingredients
1 Cup Water
1 Cup Sugar (I use 1/2 light brown and 1/2 white sugar)
1/2 to 1 cup Peach peels (and pieces of peach if some are not perfect)
Directions:
Peel the peaches following my instructions at the following link:

Bring the water and peach peels to a boil. Add the sugar and reduce the heat to simmer, until the sugar is dissolved, stirring frequently to incorporate the peach flavor. Remove from the heat, cover and allow to cool. Strain through a cheese cloth lined strainer. Use immediately or pour into a mason jar with a tight lid and refrigerate until ready to use. Will keep refrigerated for 1-2 weeks, or it can be frozen in freezer containers or ice cubes.
For Solar Tea: Use 1/8 cup Peach simple syrup to a 12 ounce glass of cold iced tea. Stir. Add a spring of Rosemary, Lemon Balm or Lavender for an additional flavor enhancement and garnish if desired. (adjust to taste)
For Sparkling Water: Use 1/8 cup Peach simple syrup to a 12 ounce glass of sparkling water. Stir. (adjust to taste)
Suggestion: Freeze in ice cube trays, to add to the tea or sparkling water.
Suggestion: If there is pulp left in the pan, just mash it up or run through the blender to puree and use to pour over ice cream, angel food cake, or French toast, waffles or pancakes.
