My sweet potato Gnocchi contains no eggs, I used aquafaba (bean liquid) as an egg replacement, so it's suitable for Vegans as well. If you prefer to use egg, add one whole egg. This is something you can make when the hens lay off and eggs may not be readily available.
Ingredients:
1 Large baked Sweet potato (Peeled and mashed)
1 C. Cooked Chickpeas (drained and mashed) or 1 can Chickpeas, drained reserving the liquid)
Pinch Sea Salt
1 tsp. Garlic Powder
3 T. Aquafaba (bean liquid)
1 tsp. Smoked Paprika
1-2 C. Chickpea flour (or as needed)
Directions:
Bake or microwave the sweet potato until soft when squeezed. Allow to cool enough to handle. Peel and mash. Add the sweet Potato and Chickpeas and lightly beaten bean liquid to a medium mixing bowl. Mix together mashing until smooth. Add the garlic, paprika, salt, and mix until well blended. Add the flour a little at a time, mixing until the dough is soft and pliable, somewhat like a soft clay. Use more or less of the flour as needed to make a soft but not sticky dough, that holds together when you fold into your fist. Flour the work surface lightly.
Bring a large kettle of salted water to a boil. Roll out the dough in 12-15" ropes. Slice the gnocchi in 1" pieces, and roll each over the tines of a fork or grater if desired for more visual interest. Carefully lower a few at a time into the boiling water until each floats to the top. Remove with a slotted spoon or mesh strainer to a serving dish.
Serving Suggestion: Serve with butter drizzled over the Gnocchi, or Marinara and cheese or a cheesy cream sauce. It can be added to soup in the last stages of cooking either raw or cooked as instructions above. Fry with minced garlic or onion in butter and add to stir fry vegetables. Sprinkle with sea salt and parmesan cheese for a healthy snack.
Note: You can use a blender to mash the sweet potato and chickpeas if desired.
You can reserve half of the mixture before adding the bean flour and use that for hummus.
