Usually egg salad is made with boiled eggs, but Scrambled eggs are just as tasty for egg salad sandwiches, and no fuss with peeling the eggs. This makes a quick lunch or on the go sandwich, loaded with protein and a refreshing change from an ordinary egg salad sandwich.
Yield: 1 Loaded Sub Slider
Ingredients
1/4 C. Lemon Cheese, divided (see recipe link below)
Pinch of fresh chopped herbs: Thyme, Oregano, Basil, Chives and Parsley
2 Eggs
1 slice Bacon (Cooked and Crumbled)
1 T. Butter
1/4 tsp. Garlic Parsley seasoning (to taste)
Salt and Pepper (to taste)
Toppings of your choice: Tomatoes, Lettuce, Onions etc.
Sub Slider Bun
Directions:
Scramble the eggs in butter. Mix the crumbled bacon into the scrambled eggs, season to taste. Fold the chopped herbs with the Lemon Cheese until well combined. Mix half of the lemon cheese into the egg and bacon mixture. Spread the remaining lemon cheese on the cut sides of the slider buns. Load the slider with the Egg and Lemon Cheese mixture. Top with your favorite toppings and serve.
