2 1/4 C. Flour
Pinch salt
1/2 tsp. Baking Soda
1 tsp. Baking powder
1 cup Cottage Cheese
1 C. Heavy cream
1 T. Coconut Palm Sugar (or sweetener of choice, to taste)
2 Fresh Peaches, pitted, diced and skins removed (reserve the peels for making Peach peel syrup-see link below)
About 2 inches of oil in cast iron skillet
Powdered Sugar for dusting (if desired)
Heat the oil in a cast iron skillet. To test carefully drop a small amount of the batter into the oil to make sure it is hot enough.
Sift the flour, salt, baking soda and baking powder together. Toss the peaches with coconut sugar. Add the cottage cheese and cream to the flour mixture and fold in until well incorporated. Add the sweetened peaches and stir in. The batter should be thick, but if you find it is too thick, add a small amount of milk or water.
CAUTION: Carefully, drop by scoop into the hot oil, brown each side. Remove with a slotted spoon to paper towel covered cooling rack. When placing the batter into the hot oil, place the scoop very close to the oil so the hot oil does not splatter as the batter is dropped.
Serving suggestion: Dust with powdered sugar and a sprinkle of cinnamon, or top with whipped cream and a slice of peach. Or top with whipped cream and drizzle with peach syrup.
