Herbal sugar is easy to make and quite expensive to purchase in gourmet shops. If you grow your own herbs, and use recycled glass jars, the project will be very inexpensive and takes just a matter of minutes to prepare. Any of your favorite cooking herbs can be used for culinary purposes, but Rosemary sugar is especially nice added to a soothing hot water foot or bath soak as well. The herbal sugars make great gifts, just add a decorative ribbon, label and you have a quick and simple gift item that you can prepare at any time of the year. If you make a variety of flavored sugars, they make a very nice addition to a gift basket.
What you need
Rosemary Sugar (1-12-17)
1 C. Granulated Sugar (Raw Sugar or Coconut Palm Sugar substitute)
1 or 2 sprigs fresh Rosemary (no moisture)
Mason Jar (large enough to hold one cup)
Lid
Jar Funnel (optional)
Directions
Use Clean, Dry, sterilize jars. Cut the lavender fresh from the plant. Allow to air dry if moistened from dew, rain or snow. Fill the jar 1/2 way with sugar or sugar substitute. Place the sprig of Rosemary on top of the sugar, then cover with remaining sugar. Place the lid on the jar and set aside in the pantry for at least 2 weeks to allow the Rosemary fragrance to blend with the sugar. You can remove the sprig if you choose or leave it in the jar of sugar and top off with sugar as you use the flavored sugar.
Do not discard the Rosemary sprig, strip the leaves and place in a jar to use in cooking or fragrant crafts.
Uses: Culinary. Use as you would any sugar to sweeten tea, hot cereal, fruits or in baking.
Uses: Non-Culinary: Use 2 or 3 Tablespoons in hot foot or bath water for a soothing soak. Rinse thoroughly after use. Rosemary is known for boosting the memory and giving the brain a boost, which is especially nice at the end of a mentally exhausting day.
