This is such a light, refreshing spread that goes well with just about any cracker, bread, biscuits or sandwich. The Lemon Cheese is easy to make and dates back to the mid 1800s. It's definitely a recipe you want to try, it has many uses and is light, refreshing with a similar texture to a whipped cream cheese.
Ingredients:
1 C. Lemon Cheese (See the link to make your own)
1 Sprig each of favorite Fresh Herbs, chopped (Oregano, Basil, Parsley, Thyme)
Cucumber (diced fine)
Chives (Chopped)
1 tsp. Garlic Parsley Seasoning (to taste)
Salt and Pepper to taste
Directions:
Mix all the ingredients together. Chill until ready to serve. Top with chopped chives and parsley for garnish if desired.
Serving Suggestions: Serve with crackers, stuffed celery, baguettes or spread on your favorite sandwich.
