Ingredients
⦁ 1 Tablespoons Coconut Oil
⦁ 1/3 cup popcorn kernels
⦁ 1/8 C. butter + 1/8 C. Peanut butter (creamy or crunchy)
⦁ 1/4 cup Molasses
1 T. Pumpkin Puree (optional)
1 T. Pumpkin seeds
⦁ 1 Tablespoon pumpkin spice
Plus any kernels that don't pop
Directions
For butter mixture:
Melt, butter in saucepan, remove from heat. Add maple syrup, molasses, seeds, pumpkin puree and spices. Whisk, set aside.
Place large saucepan on the stove on med/high heat. Place coconut oil in pot. Drop a few corn kernels in oil. Place lid on pot. When kernels pop, pour the remaining kernels into the oil, replace the lid and shake pot continuously till kernels are done popping. Immediately remove from heat.
Drizzle with melted butter mixture while stirring with a fork. Grease hands, form into balls when cool enough to handle. Set in the fridge to set up. Or, you can serve the loose, spiced popcorn in containers. The chickens aren't going to care whether you spent 2 minutes or 20 forming popcorn balls.
Tip: This is just as good for their hoomuns. Note: Adjust to taste, and you may want to add a little salt for your own popcorn treat.
