Ingredients:
Left over cooked chicken (render for broth and meat)** (or canned or cooked boneless chicken)
1 T. Poultry Seasoning*
1/2 tsp Hickory salt**
3 or 4 slices from a large onion
1 cup cut up carrots (1 " pieces)
1 cup Cauliflower florets
2 cups Orange, Yellow or Brown Lentils
DIRECTIONS:
**Render the chicken, by placing in a pan and cover with water. Simmer until all or most of the meat falls from the bones. Discard all bones, and be watchful of the tiny rib bones to make sure all are removed. (Please refer to my instructions for making your own Easy homemade broth)
This can be made with canned chicken or boneless chicken. Just simmer in enough water to cover so you create a broth.
Put chicken and broth in a slow cooker, cut up and add the vegetables and seasoning of choice (left over vegetables work just as well). Set Slow cooker on high 4 hours, Add the lentils, then turn slow cooker to low for the remaining 2-4 hours. When the lentils and vegetables are soft, the soup is ready to serve with your favorite biscuits or bread sticks*** and green salad.

HOMEMADE POULTRY SEASONING*

2 T. Parsley flakes
1 tsp. Garlic powder
2 tsp. Onion powder
1 tsp. Thyme
1 tsp. Marjoram
1 tsp. Oregano
1 tsp. sage or 1/2 tsp. Basil or Savory
2 tsp. paprika (smoked paprika is a nice alternative to the regular seasoning)
1/2 tsp. White pepper
Put ingredients through a mini chopper or mortal and pestle to grind to preferred consistency. I am not fond of strong sage taste, so if you do like sage, add a tad more to the recipe. Basil or Summer Savory can be substituted. Store in air tight container. Add by teaspoon to any poultry dish. This recipe can be made in larger portions. I make enough to fill a regular spice jar, so I have it on hand for my favorite poultry dishes. Since I make most of my own seasoning mixes, I buy in bulk the herbs and spices that I do not or cannot grow in my climate. (If there are spices/herbs in this recipe that do not suit your tastes, adjust to your preferences and portions)
San Francisco Herb Company, Atlantic Herb Company and Penzy's are good sources for bulk herbs and spices and have catalogs or can be ordered online.
HOMEMADE HICKORY SALT **

1 Cup coarse Salt
4 drops Hickory flavored liquid Smoke
Stir Salt and liquid smoke together until fully incorporated. Spread the salt mixture evenly onto a clean cookie sheet and set in the oven at 225 degrees, stirring periodically to aid in drying. When dry, funnel into a spice jar or salt shaker.
Another method I use for making my own Smoke flavored Salt is to place 1 cup salt into a heat proof container or on a small cookie sheet and place in my meat smoker when I am smoking meat. Stir a few times during the smoking process. The salt takes on the smoked meat flavor regardless of what wood chips you use. Make sure the salt is completely dry before storing in an air tight container. Smoked salt adds just a hint of smoky flavor to your favorite dishes. Use as you would regular salt and adjust to your own tastes.
