2 1/2 Cups Flour
1/4 Cup Sugar
1 1/2 tsp. Baking Powder
1/2 tsp. Baking Soda
1/2 tsp. salt
1 cup Sourdough starter
1/2 tsp. Pure Vanilla Extract
2 eggs
Mix flour, sugar, baking powder, baking soda, and salt in large bowl. Mix sourdough starter, and eggs in medium bowl; stir into dry ingredients to incorporate. Lightly flour to form into a rounded mound. Allow to set in bowl covered for about 1 hour. Preheat oven to 350 degrees F. Lift the dough mound onto a lightly greased cookie sheet and with a sharp knife cut an X in the center of the loaf, then bake 40 to 45 minutes on center rack, or until toothpick inserted in center comes out clean. Cool on cookie sheet 10 minutes. Move to wire rack and cool completely.

NOTE: Authentic Irish Soda Bread calls for buttermilk, however there is plenty of moisture in the Sourdough starter for a nice moist and flavorful soda bread. For a more Authentic version you can add 1 tsp. ground Cinnamon and 1/2 cup raisins or currents if desired.
NOTE: I cook with cast iron, which is perfect for baking soda bread in, because it holds an even temperature. So rather than cook on a baking sheet try your cast iron skillet, which helps to retain the shape and provide that even baking for perfect bread.
