Whey is nutritionally valuable, and will keep a few days in the refrigerator or it freezes well for up to 6 month. So rather than pour the whey down the drain, know that you can use it to ferment vegetables, grains and add it to sauces or gravy. Chickens will also benefit from the probiotic benefits of Whey.
Whey helps break down the fibers in meat to tenderize it. So if you've been just pouring the whey down the drain, know there are ways to use that and add to a healthy, beneficial diet. The whey marinade can be used for poultry, beef, or pork and will add another layer of flavor to the meats.
Whey Marinade
Ingredients:
1 C. Whey (from cheese making or drained from yogurt, sour cream or cottage cheese)*
1 tsp. Italian Seasoning*
1 tsp. Garlic Powder
1 tsp. Parsley
1/4 tsp. Black Pepper
Directions:
Mix the seasonings and whey together, pour over the meat, pierce wholes in the meat with a sharp knife or fork, allow to marinade at least 2 hours in the refrigerator. Turn the meat every 1/2 hour to make sure all sides are marinated. Broil, grill, roast or fry the meat as you normally would.
Tip: Slicing the meat at an angle also helps to make meat easier to cut and texturally easier to chew even cheap cuts or tough cuts of meat.
