8 small potatoes (4 large-washed but not peeled)
Thin sliced onion
Garlic~Parmesan Seasoning
Ground Sea Salt
1 T. Butter

1 T. grated parmesan cheese
1 T. Garlic Powder
1/4 tsp. Thyme
1/4 tsp. Parsley
pinch of ground Sea Salt
Mix ingredients together and funnel into spice jars with tight fitting lids. Label and store in cupboard.
Thinly slice 1/4 onion, cut potatoes in chunks. Toss in a plastic zip bag, sprinkle with the Garlic-Parmesan seasoning, close the bag and shake to evenly distribute the seasoning mixture. Place 1 T. butter in a cast iron skillet. Add the Potato and onion mixture. Fry until golden and the onions are caramelized. To speed up the process, pre-cook the potatoes in the bag in a microwave 4-5 minutes until semi-soft. Then fry in pan with butter.
Slice fully cooked Ham, sear on both sides, serve with Garlic-Parmesan Potatoes, Blueberry Applesauce and Blackberry Sun Tea or Blackberry Lemonade.
