Ingredients:
1/4 head each Red and Green Cabbage (sliced thin)
2-4 Strips thick cooked bacon (chopped)
2 C. Chicken Broth
8-10 baby carrots (or chopped carrot)
Bacon salt (to taste)
Pepper (to taste)
Directions:
Slice the cabbage thinly. Place in a kettle with broth and carrots. Season to taste. Bring to a boil, then reduce the heat to simmer for 20 minutes. Drain (reserve the liquid). Chop the bacon. Top the cabbage and carrot combination with the bacon and serve hot with roast pork or chicken.
Tip: This is especially good topped with a dollop of mayonnaise.
Tip: Reserve the chicken and vegetable broth for soup. It freezes well and gives you double usage. (Just one of my many frugal tips).
