2 Cups Pinto Beans
3 cups chopped Tomatoes
1 Cup cooked chicken meat
1 tsp. Salt
1 tsp. Pepper
1 T. Dried onion
Rinse beans, cover with hot water and let stand overnight or at least 4 hours. Drain, and Rinse the beans. Pour into slow cooker and cover with water. Allow to cook at least 4 hours on high. Add the chicken,Tomatoes, salt, pepper and onion. Reduce to low and allow to cook another 4 hours. Serve with Cornbread* Bro is a great cook and this is his own original recipe, through encouragement, I finally got him to take photos and provide his instructions, so I could write them up.
SUPER GOOD CORNBREAD
1 cup flour
1 cup corn meal
2/3 cup white sugar
1 t salt
3 1/2 t baking power
1 egg
1 cup of milk
1/3 cup vegetable oil
mix well, Bake @400 20-25 minutes
Prepare a 9 X 9 baking pan lightly with oil, pour batter into pan.
The above cornbread recipe is one you can make up as a mix to have on hand. Bro and I have made up batches of mix to be ready at any time. Just mix up the dry ingredients and place in well sealed containers. Leave out the eggs, milk and vegetable oil and add those when you make up the batter. We can't provide a source for this cornbread recipe, it's one I've had around for a long time and bro swears by it as the very best cornbread.
