Serves 2
Scrambled eggs (as many as needed for each serving--I use two eggs per person)
1 Cup Shredded or sliced cooked chicken (smoked chicken is wonderful for these)
1/4 head Napa Cabbage (cut up)
1- cup grated cheese (reliant on how many you are making and to taste)
Peach salsa (fresh homemade--see link below)
Sour Cream or plain yogurt
10-12" size Tortillas
Shred or slice the chicken meat. Scramble the eggs by your preferred method.
Lightly brown the tortillas on a flat iron griddle. Layer ingredients in the center of the heated tortilla. Dollop with sour cream or plain yogurt and a dollop of Fresh Peach Salsa*. Fold one end of the tortilla toward center, roll over each side to enclose the ingredients. All set to serve and yummy.
