2 pounds ground poultry (or choice of ground meat)
3-4 hard boiled (peeled eggs)
Prepared Poultry stuffing
Ketchup
Brown Sugar
Mix one package of prepared poultry stuffing (or your favorite homemade stuffing) thoroughly with the ground meat. Place 1/2 of the ground meat mixture into a loaf pan. Form a channel down the center of the meat. Place the peeled/boiled eggs at equal distance down the center of the meat mixture. Press the remaining ground meat over the eggs and form around them firmly. Bake at 350 degrees for one hour or until all juices are clear and the meat is thoroughly cooked. (drain off excess fat if necessary)
Mix 1/2 Ketchup to 1/4 cup brown sugar. Pour the glaze evenly over the top of the meat loaf. Return to the oven for 10 minutes. Double the sauce if you also want to use it for a dipping sauce.
Serve hot, with your favorite vegetables or cold for meat loaf sandwiches. You can make this ahead and freeze to use at any time.
Squash and Rice Rings

INGREDIENTS
Small oblong squash, such as zucchini (cut in rings and seeded)
Dry rice
Sugar
Paprika
DIRECTIONS
Bring water to boil, add 1/4 cup sugar. Add dry rice and cook until tender. Drain the rice. Scoop rice into each squash ring. Sprinkle with paprika.
Fry the squash in a cast iron frying pan with a small amount of butter or oil on low until tender, browning each side.
