3 large sweet potatoes/yams (washed peeled and cut up)
2 large cooking apples (gravenstien, ginger gold etc.) (washed and cut up)
1/4 cup Butter (reserve enough to butter the pan and dollop on the casserole)
4 T. Honey
1/4 C. Brown sugar
pinch salt (optional)
Dash of cinnamon or allspice (optional)
Butter an 8 X 8 oven-proof casserole dish. Prepare the apples and sweet potatoes. In a large bowl*, mix together the remaining butter, honey and brown sugar, add the potatoes and apples, stirring them thoroughly to coat all sides. Pour into the prepared casserole dish. Dot with butter and sprinkle a tablespoon of brown sugar on top. Cover with aluminum foil. Bake at 350 degrees until tender. About 30-40 minutes. If you would like them caramelized, set under broiler 5 minutes or until nicely browned. Serve with ham, poultry or pork. When ready to serve, add a dash of cinnamon to individual servings if desired.
*NOTE: I placed them in a sealable plastic bag to shake them up and thoroughly coat, so there were no extra dishes to wash. Just rinse the bag, dry and re-use.
