YAM N' EGGS SKILLET MEAL

4 Medium size yams/sweet potatoes
4 large eggs
1 T. Butter
Salt and Pepper or season to taste
Grated cheese
Wash, Peel and dice, slice, julienne or grate yams. Place butter in skillet on medium heat. Place the cut up yams in the skillet, brown the yams on both sides. With the turner, make 4 rounded crevices. Break an egg into each crevice. Salt, Pepper or season to your liking. Place lid on the skillet until the white is cooked on the egg. Grate the cheese over the yam and eggs. Serve hot. Garnish with fresh from the garden Cucumber, carrot and other fresh vegetable slices.
Note: This can be done in the oven as well. Set oven temp at 350 degrees, bake until the eggs are set. (about 15-20 minutes) This has 3 basic ingredients for a quick skillet meal. Cheese and seasoning is optional.
As with most skillet meals, you just can't beat Cast Iron skillets, for stove top, oven or campfire cooking.
