2 C Apples (Peeled, cored and cut in chunks or wedges)
4 C Cranberries (Fresh or Frozen)
2 C unsweetened Apple Cider (or Juice of choice)
1 C Honey (or to taste)
1 squeeze of fresh lemon (optional)
Rinse the cranberries and sort for firm ripe berries and discard shriveled or discolored berries (or dehydrate for the chickens). Pour the cranberries and juice into a medium-size kettle. Bring to a boil, then turn down to simmer until berries are cooked. Strain off the juice into a bowl, pushing against the berries to extract all the juices. Add the honey and a squeeze of lemon juice and bring to a boil for 3 minutes. Run the berries through the food processor or blender to puree. Prepare the apples and bring to a boil in a small amount of Apple Cider or juice until tender. Strain off any excess juice. Run the apples through the food processor or blender to puree. Mix the prepared cranberry puree with the apple puree. Allow to cool and refrigerate to serve fresh or pour while hot into hot sterilized jars and fasten caps and lids. If canning, follow strict guidelines for processing.
NOTE: For more texture to the sauce, run the apples and cranberries through a food mill instead of the food processor. This is such a pretty applesauce and is a pleasant change from plain applesauce. This is ideal served as a side dish for holiday meals or anytime with turkey, ham or pork.
NOTE: Other sweeteners of choice may be used. Pure Maple syrup, white sugar, corn syrup, stevia, Agave Nectar are all options if you prefer not to use honey.
Note: Reserve the pulp for dehydrating for the chickens.
