Bean Mix:
- 1/2 cup dried Red Beans
- 1/2 cup dried Navy Beans
- 1/2 cup dried Pinto Beans
- 1/2 cup dried Black Beans
- 1/2 cup dried Red and/or Yellow Lentils
- 1/2 cup dried Rice
- 2 teaspoons dried Minced Onion
- 2 teaspoon dried carrot
- 1 teaspoon dried Parsley
- 1 teaspoon Sea Salt
- 1/2 teaspoon Celery Seed
- 1/2 teaspoon Garlic Powder
- 1/2 teaspoon Pepper (optional)
To Make Soup:
Add:
1 quart home canned broth (beef or poultry) or 2 cans store-bought broth
1 cup Beef chunks, Cut up Sausage or Poultry meat
Rinse and Soak the beans overnight. Pour off the water and rinse. Place the beans in the slow cooker. Add 1 quart beef or poultry broth. Add beef chunks or poultry if desired. Cook on high 4 hours, add the seasonings and cook on low another 4 hours. Serve with fresh baked cornbread or home baked bread.
NOTE: This is easy to make up in quart mason jars for the pantry. Simply layer the beans, lentils and rice altering dark and light colors. Place the seasoning mix in a snack size sealable bag and place on top For gift giving, with jute, tie a label around the neck of the jar with instructions for use. This could also be made into a full basket gift, adding the canned broth and cornbread mix to finish the basket. For one or two people, use a pint jar, and halve all the ingredients.
NOTE: For quick soak, rinse beans, place in a saucepan with water, bring to a boil. simmer 1/2 hour. Drain. Then follow the instructions above.
