1 Cup rolled Oats or Wheat Flakes
1/2 Cup Chocolate chips (or white or 1/2 of each)
1/2 Cup Peanut butter (Crunchy or smooth) or almond butter
1/4 cup Chia seed
1/4 Cup Brown Flaxseed
1/3 Cup Honey
1 tsp. Maple extract
In a medium size bowl, mix oats, 1/4 cup melted Chocolate chips, peanut butter, chia, flax and extract. When cool enough to handle, mix in the whole chocolate chips. Stir thoroughly to incorporate all ingredients. Roll in balls or round cookie shapes. Allow to set up on wax paper until firm.
Keep in sealable air-tight container. Great for hiking trips, mid-day pick-me-up, emergency energy bar or kids healthy snack.
Alternate Energy wafer
1 Cup Wheat Flakes
1/2 Cup Raisins, Craisins or chopped dates
1/2 Cup Coconut Butter
1/4 Cup Chia Seed
1/4 Cup Golden Flaxseed
1/3 Cup Molasses
1 tsp. Vanilla Extract
In a medium size bowl, mix Wheat Flakes, Coconut butter, dried fruit, chia, flax and extract. Stir thoroughly to incorporate all ingredients. Roll in balls or round, flat cookie shapes. Allow to set up on wax paper until firm.
Keep in sealable air-tight container. Great for travel, hiking trips, mid-day pick-me-up, emergency energy bar or kids healthy snack.
Can be kept in the refrigerator or freezer for longer shelf life.
