About a dozen biscuits
Ingredients
2 C. Flour
1 T. baking powder
pinch salt
1/3 c. butter or butter flavor shortening
1 cup Eggnog (or 1/2 milk + 1/2 cream)
Directions
Mix together the flour, baking powder and salt. Mix in the butter or shortening with a pastry blender or fork until it resembles coarse cornmeal. Slowly stir in the egg nog until the dough begins to pull from the sides of the bowl.
Turn out onto a floured surface and knead a few times. Oil your hands, then pinch off a ping pong ball size portion of dough. Gently form into balls and place close together in an un-greased (but well seasoned) 12 inch Cast Iron Skillet
Bake 10 to 12 minutes in preheated 400 degree oven or until they begin to lightly brown. Serve warm with honey butter, fruit spread or a dollop of plain or flavored butter.
NOTE: You can roll the dough out and use a biscuit cutter if you prefer, however I make all my biscuits by pinching off dough and lightly rolling in a ball before baking.
