Eggnog is easy to make, and can be as thick as the store-bought version, depending on the ingredients you use. The store-bought version has corn syrup and guar gum or gelatin added for flavor and thickening, however that can be achieved by using eggs, whole milk and thick cream and heating to thicken. This is a cooked eggnog recipe, so there is no risk using raw eggs. It can be served warm or cold. Be watching for my many versions of Eggnog throughout the Christmas season.

6 egg yolks (reserve the egg whites)
4 cups whole milk (can use low fat milk or non-dairy, but it will not thicken without the cream of whole milk)
1/2 Cup White Sugar (or to taste)
1 tsp. Ground Cinnamon
Whip Cream Topping (optional)
Heat milk in a saucepan, slowly over low heat, stirring constantly to prevent scorching. Beat egg yolks until light and fluffy. Mix Sugar and cinnamon together and add to yolk and beat again until light and fluffy. When the milk is heated (but do not boil), ladle some of the milk into the egg mixture slowly,(this will temper the mixture and prevent the eggs from lumping up in the hot milk). Continue to heat as the Eggnog thickens, stirring constantly to prevent scorching. Allow to cool, then refrigerate, Or it's ready to drink hot. Top with Whip Cream and drizzle with chocolate syrup if desired.
**Egg whites can be used in other cooking requiring egg whites, such as meringue, or whip them up with a little sugar and 1 tsp. cream of tartar until stiff peaks form, and dollop on top of the eggnog for a topping. Sprinkle with Nutmeg, Cinnamon or Allspice if desired.
NOTE: If you want a richer/thicker eggnog add 2 cups heavy cream or half and half and heat with 2 cups whole milk. More calories, but very tasty.
NOTE: Adjust sweetener and ingredients to suit your special dietary needs and taste. The spices can be adjusted and optional, to suit the ones you like, but the finished product will be altered.
NOTE: This is a non-alcohol version, however you may wish to add brandy, rum, bourbon, coffee liqueur or your favorite liqueur to taste, see links below for making your own liqueur.
