Yield: Approximately 1 Cup
Ingredients
1 C. Sea Salt (any type you prefer)
1 T. Lemon Zest
1 tsp. dried Lemon Thyme (fresh can be used)
What you'll Need:
Spice jar or Mason Jar with tight fitting lid
Jar Funnel (optional but handy)
Microplane or Peeler
Directions
Prepare the lemon zest using a microplane, or a peeler with a serrated edge to create fine strips. (make sure to only grate the peel, the pith is what makes citrus bitter). Layer the salt, then lemon zest, salt and lemon thyme, then salt until the final layer is salt. Fasten with a tight fitting lid and place in the pantry or on a cupboard shelf for two weeks to blend the flavors.
Uses: Use to flavor chicken, pork or fish. Season to your own taste. Rub into the meat for a deeper lemony flavor.
