Compote is quick and easy and tastes yummy on ice cream, plain yogurt, hotcakes, waffles, french toast or over a plain pound cake. Try my Blackberry stuffed French Toast recipe at the link below.
INGREDIENTS
1 Cup berries
1 Cup berry juice
1/4 Cup sugar (Or to taste)
1 T. Cornstarch or Clear Gel
Place the berries, juice and sugar in the kettle, slowly heat to dissolve. Mix a little of the juice with the Cornstarch or Clear Gel and whisk until smooth. Add the juice mixture to the berries and stir until thickened.
NOTE: Any berries, combination of berries or other fruit can be used for the compote. Season and sweeten to taste.
This keeps well in the refrigerator, but allow to warm to room temperature to make it easier to spoon or drizzle onto baked goods or as a filling for baked goods and as an ice cream topper.
