Ingredients
1 tsp. Garlic Herb seasoning (see recipe below)
Seeds from fresh squash (rinsed and pulp removed)
Directions
Scoop the seeds from the fresh cut squash. Place in a sieve or strainer with small holes. Rinse and remove the pulp (reserve the pulp for the chickens). Place the rinsed seeds (while still wet) on a foil lined cooking sheet. Sprinkle with garlic-herb mixture. Place in 400 degree oven for abou 10 minutes until golden brown. Remove from the oven and allow to cool. Eat as is, or add to granola mixes and other healthy snack choices.
If you're not fond of squash seeds, be sure to give the pulp and seeds to the chickens, they love it and it's a good healthy treat for them. Just add it to their grains, or vegetable scraps. The above recipe can be used for roasting the squash seeds for the chickens (just eliminate the parmesan cheese when preparing the Garlic Herb Mix). They like them fresh and roasted.
Garlic Herb Mix

1 T. Garlic Powder
1 1/2 tsp. Parsley
1 T. Grated Parmesan cheese
Mix all ingredients together and store in air tight jars. This herb mix is great on meats and mixed with butter makes a great spread for garlic bread.
