This snack is reminiscent of Corn Nuts snacks when they crisp up. I lined my cooking sheets with foil for easy clean up and used plastic sealable bag to distribute the spices rather than using a bowl; again, easy cleanup for a quick and care free snack any time. But if you prefer toss in a bowl to distribute the oil and spices.
Garlic n Spice Chickpea Snack
1/2 T. Oil (I used grapeseed oil)
1 T. Garlic Parmesan Seasoning *
1/2 tsp. Chili Powder (optional)
Pinch Hickory Salt* (optional)
1-15 oz. can (drained) Chickpeas (Garbanzo Beans)
Preheat oven to 425 degrees F. Line a rimmed cooking sheet with foil. Drain the chickpeas thoroughly.
Pour the chickpeas into a sealable plastic bag. Drizzle with oil. Sprinkle the seasonings and salt. Seal the bag, shake to distribute all the seasonings well.
Pour out onto lined cooking sheet. Place on the top rack of the oven. Bake 25-30 minutes. Turn the chickpeas a few times while roasting to prevent scorching. Remove from the oven and cool 10 minutes to finish crisping up. Ready to serve.
Note: As always, season to taste. If you have a salt restricted diet, you can omit. If you prefer hotter spice, add more chili powder etc. I used a light oil, but use the oil you prefer. These should not be oily and you'll notice I used very little, just enough to help hold the spices on the chickpeas.
