HAM N CHEESE QUESADILLA

Quesadilla's are the ultimate appetizers because you make it all in one and cut in wedges to serve with your favorite toppings or dipping sauces. These are quickly gone whether served as a snack or for gatherings. Simple ingredients and simple preparation will make this one of your favorite go-to recipes whether feeding a crowd or a snack for two.
Flour or Corn Tortilla
Thinly sliced, smoked ham or chicken (or shredded chicken meat)
Cheese (grated) (Monterey Jack, Mexican Mix or cheese of choice)
Salsa and Sour Cream or plain yogurt*
Heat a cast iron griddle, lay one tortilla in the pan, grate and thinly spread cheese over the tortilla. Slice the meat in very thin slices (or use cooked shredded chicken meat). Arrange the ham slices over the cheese. Grate more cheese over the top of the ham. Top with the other tortilla. Turn the tortilla over when nicely browned. Brown the reverse side. Carefully lift the Quesadilla from the pan with turner onto a chip and dip plate. Cut in wedges, serve with Salsa and Sour Cream. Repeat for number of servings required.
NOTE: You can add cheese of choice, sliced tomatoes, sliced avacado, and sprinkle sliced olives on top before adding the second tortilla, just be sure to grate more cheese so the tortillas bond together.
NOTE: For a great dipping sauce, prepare 1 cup plain yogurt with 1/2 cup Salsa, stir until thoroughly blended with hand whisk.
