1/2 pound Ground Chicken
1 cup Pinto Beans
1 cup Red Beans
Chili Seasoning/Chili Powder (to taste)
1/2 Cup Chopped Onion
1 pint canned Tomatoes
Wash, Soak and Cook the beans until tender. Cook the ground chicken breaking apart to small particles, drain off any fat. Pour the beans into the pan with the cooked chicken, add Chili Seasoning or Chili powder to taste. Add Chopped onion. Allow to simmer, stirring occasionally, until flavors are blended and the chili thickens. If you like thicker chili, add 1 T. Cornstarch as thickener, stir until fully incorporated.
Top with grated cheese and plain yogurt, sour cream or crumbled Feta cheese. Serve with fresh garden salad in a taco shell/bowl or bowl of choice.
