2 cups cooked chicken meat
1 cup cauliflower (break into florets)
2 cups yam/sweet potatoes (Medallions or cut up)
1/2 cup dried potato flakes
1 tsp. Poultry Seasoning
Salt to taste
Prepare vegetables, cut up meat or tear into bite size pieces. Place in a large kettle or dutch oven. Cover with water, bring to a boil, then simmer at least 2 hours (longer brings out more flavor). Season to taste. Add dried potato flakes near the end of cooking time to thicken if desired. When ready to serve, garnish with a pinch of smoked paprika and pinch of basil.
This soup will freeze well and easy to make up in a slow cooker. Just set on high 4 hours and low an additional 2-4 hours. Prepare the same as if using a kettle.
Sweet potatoes and Yams are loaded with nutrition and essential vitamins. They add just the right texture and flavor to a chicken soup.
Sweet potatoes and Yams are easy to grow as houseplants or in a garden with loose, well draining soil. Just cut off a portion of the potato with at least one *eye*, set in water until rooted, prepare a hole in good potting medium to set the roots in, pack the soil firmly around the base of the potato and water. Sweet potatoes/yams do not like wet feet, but do enjoy loose, moist soil. These do not need to be layered or mounded like white or red potatoes. If using a garden bag, plant 3 to a bag and harvest when ready. Sweet potatoes and yams are not winter keepers, but you can dehydrate or freeze them, seal in air tight containers and enjoy in soups and other recipes through the long winter months.
