I set up my work station to make it easy to work when I'm canning or cooking. For the peaches, I set up a bowl of water with lemon juice or citric acid and place in the sink. The colander for the peaches is set in the sink beside the water bowl. A small bowl is set in the sink between the two other containers for the peels. By setting up the station it takes less time, effort and mess when working with vegetables or fruits for canning or freezing.
How to Remove Peach Peels
Wash the peaches under cool tap water to remove the fuzz. Heat a kettle of water to boiling. Carefully lower peaches into the boiling water. Remove with a slotted spoon to a colander, run cold tap water over the peaches to stop the heat process. Slip the peels off easily. Reserve the peels to make Peach Syrup. To prevent browning place the peaches, (halves or slices) in a large bowl with water and 1 T. lemon juice or add citric acid (fruit fresh) according to package instructions)
Once the peels have been removed, you can slice the peaches to use for pie filling. Refer to my recipe for Peach Pie filling (coming soon).
NOTE: The peaches are ready for canning or freezing or using fresh once the peels have been removed.
