Who says floats have to be restricted to Rootbeer or Cola products?? As usual I pick up some holiday flavored Sparkling Cider as I prepare for guests and this time was no exception. As I reached for the bottles, it occurred to me that would be a great winter float. So I set out to create that holiday Ice cream float, that you can make in individual servings or for a crowd.
Approximately 2 servings
1 bottle Apple Cranberry Sparkling Water
French Vanilla Ice cream
12 oz. or larger Goblet
Apple Spice mix
Honey
2 T. Butter (or Coconut oil)
1 Red Apple (Thin sliced wedges)
Straw and long spoon
Place thin sliced apple wedges in a cast iron skillet with melted butter. Cook until still firm, but tender. Sprinkle with Apple Spice mix and drizzle with honey and simmer until carmelized, but not mushy. Allow to cool. Scoop ice cream into each goblet, slowly pour the sparkling water over the ice cream. Allow the foam to settle, and add more sparkling water if necessary until the ice cream floats above the edge of the goblet. Top with a scoop of the cooked apple mixture. Serve with a straw and long spoon.
NOTE: If you would like an adult beverage, just add an ounce (or desired amount) of Apple brandy to the glass as you're filling it with the sparkling cider.
