INGREDIENTS
1 Cup White Rice
4 Cups water
1/2- 2/3 Cup Milk 2% (any milk will do, for a rich taste the more cream the better)
1/2 Cup Sugar
1/2 tsp. Cinnamon (or allspice) (or to taste)
1 T. Vanilla
Ice
1 cup Frozen strawberries (optional or use other fruit)
Swirl the water and milk in a blender until the rice is broken up. Allow to sit at least 4 hours in the refrigerator. Strain the rice from the liquid (reserving the liquid), through doubled cheese cloth or a very fine strainer, into a pitcher. Add water, sugar, cinnamon and Vanilla, stirring thoroughly. Refrigerate overnight. Stir well before serving. Serve with Ice. Makes about 6 cups of Horchata. Note: This is best served cold.
The first time I had Authentic Horchata, was a very hot summer day and I had no idea what it was, regardless I was thirsty and after asking about it and deciphering broken English, decided that would be my beverage of choice. It was so refreshing and so tasty that I've intended to make some and finally got around to doing it. My version has added berries, but this is typically served without fruit and without milk, and if milk is used it is likely goats milk rather than cows milk. If you have an intolerance to milk products, try Almond, Rice or Coconut milk or simply use water, for your own unique version. I imagine there are as many Horchata recipes as their are matrons of the country, each with their own unique version handed down for generations.
For My version in the photos: Run the frozen strawberries through the blender leaving some chunks (not pureed'). Stir into well chilled Horchata. Add ice (my ice was also frozen with strawberries) and serve. Garnish with Strawberries and a cinnamon stir stick. Top with whipped cream if desired, with a dash of cinnamon.
