For a quick and easy dessert using lemon curd, purchase ready made tart shells, or pie dough and place in muffin tins. If using pie dough you will need to roll it out, cut it to size and press into muffin tins, poke vent holes in it with a fork and bake a few minutes to brown slightly.
Prepared tart shells (found in the freezer section)
Lemon Curd (follow the link)
Scoop about 2-3 T. Lemon Curd into each tart shell. To make it easy, use muffin tins to place the shells in. Cover with plastic wrap. Refrigerate until ready to use. Top with whipped cream or vanilla yogurt if desired.
