Yield: 1/2 cup servings=Serves 6-8
Ingredients
2 C. Cooked Rice (chilled)
1/2 C. Crushed Pineapple (drained, reserve the juice)
1 can Fruit Cocktail or Tropical Fruit Cocktail (drained, reserve the juice)
2 C. Whipped Cream or Non-dairy topping
Directions
In a medium sized bowl, mix the rice and fruit together. Whip the cream to stiff peaks and fold into the rice and fruit mixture. Chill before serving.
