Tomato- Spinach and Chicken Tortellini
Ingredients
1 C. Fresh Grated Parmesan Cheese (reserve some for garnish)
1/2 small onion (diced)
1 C. Diced Tomatoes (Fresh or canned)
2 C. Spinach (drained frozen or canned or fresh)
1 tsp. Dried Basil
1/2 tsp Dried Oregano
2-3 cloves garlic (minced)
4 oz. Cream cheese
1 C. Chicken (cooked and cubed)
1 Cup Broth *
2 C. Tortellini (tri-color-cooked)
Salt and Pepper to taste
Fresh Parsley (garnish)
1 T. Butter
Directions
Saute` onions and garlic in butter in a 12" cast iron skillet, add tomatoes, spinach and seasoning. Stir in Cream Cheese and broth and bring to boiling, stirring as it thickens. Stir in the Tortellini and 1/2 the Parmesan, and heat through until Tortellini is tender (about 10 more minutes). Serve hot. Garnish with remaining Parmesan and fresh Parsley if desired.
Note: This can be entirely vegetarian, use vegetable broth and omit the meat if desired.
Tip: Reserve the pasta water to make soup, soak dry beans, use in place of other liquid when making bread or biscuits, use to steam vegetables, or water your plants. There are a lot of minerals in the pasta water, and the starch helps bind ingredients, and to add flavor to soup and bread.
