This is easy to make with ingredients you likely already have in the pantry. Clean up is easy with the disposable squash bowl for serving. This can be oven-baked or cooked on the stove top in your 12" Cast Iron Skillet. Italians make a similar dish, known as *Eggs in Purgatory*, this is my country-style version of that popular dish.
Serves 4
INGREDIENTS
1 Can Tomatoe puree`
1 can Tomatoes (with juice)
1/2-1 whole onion sliced
4 slices thick bacon
2 Potatoes (thinly sliced)
4 eggs
1 tsp. Garlic Seasoning
1 tsp. Italian Seasoning or to taste
1 T. grated Parmesan or Romona cheese
Pinch salt and pepper (optional)
2 T. Butter (or oil)
DIRECTIONS
Prepare the onions, potatoes and fry the bacon in the skillet. Remove the crisp bacon from the pan, allow to cool and chop in small pieces. Leave the bacon drippings in the pan to carmelized the potatoes and onions or drain off and use a pat of melted butter or preferred oil. When the potatoes, onion and bacon are cooked to your liking, pour the tomatoes and tomato paste over the ingredients in the skillet. Add seasoning as desired. Heat thoroughly on medium heat, simmer until hot and bubbly. Or place the skillet in the oven at 350 degrees for 25-30 minutes. With a spoon, press an indentation into the Sauce mixture in 4 equal sections. Break a fresh egg into each indentation. Cover the pan with a lid until the whites of the egg are thoroughly cooked and the yolk is still soft. (stovetop or oven) If you prefer a hard cooked egg, allow to heat longer until the consistency you prefer. Par-cook the squash in the microwave 5 minutes or until tender or in the oven 20-30 minutes. With a large spoon, scoop the sauce into a prepared Acorn squash* and top with an egg. Serve with grilled Garlic French bread.
*To prepare the Squash bowl, wash the squash, dry thoroughly, cut in half length-wise. Scoop out the pulp and seeds. Bake 20-30 minutes at 350 degrees until tender, or microwave 5 minutes until tender.
