Ingredients
2 C. Cooked Savory Rice*
1/2 C. Fresh Salsa*
1 C. Cooked Black Beans (or 15 oz. Can Black Beans-drained and rinsed)*
1 C. Cooked Rotisserie chicken or 2 Cooked Chicken Breasts (cubed or shredded)
1/2 C. Shredded Mexican Cheese (or your choice cheese)
1/4 C. Chopped Parsley
1 Bunch Chopped Chives
Directions
Cook the rice. Mix the chicken and beans with salsa and half of the cheese in a cast iron skillet. Heat on simmer until the meat and beans are heated through and the cheese is melted. Scoop rice onto individual plates. Top with the bean mixture, and sprinkle with the remaining cheese and herbs.
Serving Suggestions: Serve with Sour Cream or Plain Yogurt if desired. The combination of ingredients makes a great bean burrito. Just mix as above, scoop onto tortillas, sprinkle with cheese and herbs and add a dollop of sour cream roll them up, and your meal is ready.
