Ingredients
⦁ 2 eggs (separated)
⦁ 2 cups all-purpose flour
⦁ 1 cup cream
⦁ 1/2 C. Pumpkin puree
⦁ 1/4 cup vegetable oil
⦁ 1 tablespoon brown sugar
1 tsp. Pumpkin Pie Spice mix
⦁ 4 teaspoons baking powder
⦁ pinch salt
⦁ 1/2 teaspoon pure maple extract
Directions
Preheat waffle iron. Beat egg yolks in large bowl with hand beater until fluffy.. Beat in flour, cream, vegetable oil, pumpkin, sugar, baking powder, salt and extract, just until smooth, Whip the egg whites until light and fluffy then fold into the batter.
Spray preheated waffle iron with non-stick cooking spray. Pour mix onto hot waffle iron. Cook until golden brown or according to your manufacturer recommendations. Serve hot, with maple syrup, pumpkin butter or place two together, offset and decorate with pumpkin butter, and whipped cream to represent a sunflower.
